Kellie & Jason came over last night for dinner & a movie. It was nice to have an excuse to actually cook something, instead of “assembling" dinner {PBJ or cereal}, buying something {we've been eating out far too often} or heating something up {the new frozen Kashi meals are SO good)}. I made Mexican Meatballs. Delicious!
2 T olive oil
1 medium yellow onion, finely chopped
2 garlic cloves, minced
1 jalapeno, seeded & chopped (note to self: do not touch eyes after chopping jalapeno)
1 lb. Ground pork
½ cup dry bred crumbs
1 large egg
2 t kosher salt
¼ t ground cumin
1 16-oz. Jar salsa
Corn or flour tortillas, or cooked white rice for serving
Heat oven to 400° F. Heat 1 tablespoon of the oil in a large, preferably ovenproof skillet over medium heat. Add the onion and cook until softened, about 3 minutes. Add the garlic and jalapeño and cook for 1 minute. Remove from heat; let cool. In a large bowl, combine the pork, bread crumbs, egg, salt, pepper, cumin, and onion mixture. Shape into 12 meatballs. Wipe out skillet, add the remaining oil, and heat over medium-high heat. Brown the meatballs on all sides, about 7 minutes total. If not using an ovenproof skillet, transfer the meatballs to a baking dish. Pour the salsa over the top. Bake until cooked through, about 25 minutes. Serve with tortillas or rice.
I served them with guacamole {thanks, Kellie}, tomatoes, cheese & sour cream. They were actually pretty good {Mike said that it should definitely be a “repeat” recipe}. The highlight of the night was the Brooklyn Blackout cake that I picked up from the Two Little Red Hens Bakery {just down the street}. Kellie & I both agreed that it was the BEST chocolate cake we have ever had. It was a mixture between a dark chocolate cupcake, a cake & pudding. I can’t even begin to describe how delicious it was. {Side note: I've now found the BEST of several things in the city- chocolate cake, cupcakes, hot chocolate, hamburgers, pizza, strawberry shortcake, gnocchi, eggs benedict, rice pudding & pancakes.}
We stayed up way too late. I hope Kellie & Jason found a cab, because walking 20 blocks home at 1am probably isn’t too much fun. Kellie didn’t believe me that I would sleep in today {sleeping in for me typically means 7:30 or 8am} but guess what- I woke up at 9:45! Love it. Mike on the other hand is still sleeping at 11:15. I’ll give him until noon. He hasn’t been feeling great this week, so I’m thinking that he needs the extra zzz’s. I’ve taken advantage of the quiet time to catch up with friends {i.e. read their blogs!} and do some cleaning around the apartment. I’ve thought about calling my mom, my sisters, & my grandma. Blasted EDT.
On the agenda for today: grocery shopping at Trader Joe’s, hopefully spending some time at the park {my skin could use some sunlight}, going on a run and maybe even making a trip to the Met. We live so close to Museum Mile that we really do need to go at least once a month. I’m not a huge museum person {I sort of said, “Hmm. Okay. Let’s go.” when I saw the Mona Lisa in Paris}, but I bet I could become one, right? I’ll try.

We actually decided to skip cabs, buses and subways last night and walked home. It was surprisingly warm and made for a nice walk. I can't believe you slept that long, amazing!! I actually woke up at 7:45 and thought it was time to get ready for work, weird that this never happens during the week...
Hey - the meatballs were yummy!. We had them for casual company tonight. I upped the cumin by about half and that made them even muy delicioso.
Oh my...sleeping in until 9:45. A dream.

So if you aren't really a museum person, but you want to go, I would suggest taking one of the free tours they do- I know the Met and the MOMA have them pretty often throughout the day. And they have different themes- some will cover the "biggies" in a museum, some will cover a certain time period, or certain theme, etc. Most are about 30-45 minutes long and there is a schedule at the front. I think if you are wanting to learn (reading the plaques next to a work usually doesn't do much) that is a great way to go. Otherwise, just wandering for a little is nice. I love doing that and whatever work(s) catch my eye or maybe inspires/touches me without any explanation the most that visit, I go buy the print of it in the gift shop when I'm done. Love museum gift shops. Okay anyway, that is my spiel on museums, if you decide to go, either way is great. And don't feel like you have to spend hours in one- you might hit burnout if you do.
