We were at the park again Sunday afternoon with friends - per usual. I made my favorite fruit salad with lots of extra mango & mint (+ the new addition of lemon zest). Yum.
I think I'm on a quest to find really great picnic food to get us happily through the next 4 months or so of Sundays. Any recommendations, internet?

America's Test Kitchen's sesame noodles with shredded chicken.
(I'm a lurker who made the noodles for dinner last night and thought, "These would be perfect picnic food!")
chicken salad! i'm not going to lie... my chicken salad is always a hit haha, so here you go:
dill--to taste (a lot)
handful of golden berries mix from trader joes--to taste (cut up)
4 chicken breasts (more or less depending on size)
1 small onion (sweet or red)
1 stalk of celery, sliced thin
mayo (not miracle whip!), to taste
add together and chill and it's the perfect summer treat! served on pita, crackers, or whatever! :)
Ok, so these pictures are insanely gorgeous! Oh my goodness, I love them!
I do not cook (I'm definitely more of a baker), but my mom always makes these sesame noodles that are soooo good that even I like them (shocking, because I am the pickiest eater on the planet) and so easy that even I can make them and let me tell you, that is saying a LOT. Here's the recipe:
linguine noodles, cooked al dente
stir fry sauce (she always uses the House of Tsang brand; they have a regular stir fry sauce, and then they also have a Szechuan spicy kind that she sometimes uses)
sesame seeds
That's all, just 3 ingredients! Just mix some of the sauce into the noodles (not too much, just enough to cover all of the noodles). Mix in lots of sesame seeds (as much as you want), and then sprinkle some on top. We always chill it in the fridge first and then eat it cold. Like I said, it is so, so good, and easy, and perfect for summer!
And I just looked and saw that Deidra also left a recipe for sesame noodles.
And as far as baked goods go, I'm still a huge fan of Ina's lemon bars (http://www.foodnetwork.com/recipes/ina-garten/lemon-bars-recipe/index.html).
I hope that this helps at least a little bit. Happy picnic-ing!
